Thanks for holding tight for the last few months while I took some time to rest from the wonderful world of blogging. Here's a happy and healthy way to kick-off THSD again- a breakfast favourite of mine, cacao granola. I find that I eat healthier meals during the week when I devote some time on the weekend to preparing my meals. So, tomorrow I will top up my stash of crunchy cacao granola to add a bit of love to my breakfasts this week. It tastes delicious on fruit salad, oats or in a yoghurt parfait and is really tasty with raspberries.
What you need:
1 1/2 cups of organic oats
1/2 cup mixed raw nuts (I use pecans, walnuts and macadamia nuts)
3 tablespoons of pepitas
3 tablespoons of sunflower seeds
2 tablespoons chia seeds
2 tablespoons raw cacao
3 tablespoons Indah organic coconut oil
roughly chop nuts (I use a food processor)
put all ingredients in a bowl and mix well
spoon onto a tray and spread evenly
bake in the oven at 150 degrees Celsius for 15 minutes, stirring regularly*
*cooking time may vary, bake until crunchy but be careful not to burn the nuts!
